Masaala Upma
Ingredients:
Sooji(Cream of wheat):3 cups
Peanuts:1/4 cup
Cashews:1/4 cup
Carrots:1/2 cup
Beans:1/2 cup
potatoes:1
Tomatoes:2
Peas:1/2 cup
onions:1
Green chillies:4
Ginger-garlic paste:1/4 tbsp
Masaala powder:1/4 tbsp
Curry leaves:3stems
coriander leaves:1/2 bunch
Chanadaal:3 tbsp
Mustard seeds:2 tbsp
Turmeric powder:a pinch
water:6 cups
oil:5 tbsp
Method:
Put a big sauce pan on the stove and pour oil in it.
After the oil gets hot, drop cashews,peanuts,chanadaal and mustard seeds.
When the mustard seeds start splattering,put curry leaves,cut onions and split green chillies.
Fry for about 2-3 minutes, after a while put all the cut vegetables(carrots,beans,potatoes and tamotoes) and peas.
While frying onions and vegetables, add ginger-garlic paste, after that add masaala powder and turmeric powder.
When onions and vegetables turn into gold color add 6 glasses of water and salt.
Bring the above watery Upma mixture to a boil and then slowly pour Sooji, while stirring gently to prevent any lumps from forming.
Put the lid on and leave it till Upma becomes thick, and then turn off the stove.
Garnish with chopped coriander.
Serve hot
